Fudgy Blackberry Brownies

Bake up some treats the little ones (and big ones) will love! Instead of discarding your sourdough starter in the trash or compost, add it to 1 cup of water 1 cup of flour and allow to ferment for 4 hours. Then add it to this knock-your-socks off brownie recipe! 

Next time you’re at the store, grab a bag of semi sweet chocolate chips! Besides, they’re good to have on hand for pancake mornings.  

When these brownies came out perfectly crusted on top, crunchy on the edges, and gooey in the middle, I had to share! 

Wet Ingredients:

  • 1.5 cups semi-sweet chocolate chips
  • 1 cup butter (2 sticks)
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1 cup fresh and activated sourdough starter

Dry Ingredients:

  • 1-1/2 cups flour
  • 2 cups sugar (I chose brown sugar for its rich flavor)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup blackberries (we used "Sweet Caroline" Blackberries ba, ba, ba 🎶) *optional and seasonal

Instructions:

  1. Preheat your oven to 350°F (175°C)
  2. Option 1: Start by melting butter and chocolate in the microwave. Heat in intervals of 30 seconds, stirring in between until the mixture turns creamy. Set aside and allow it to cool until it reaches lukewarm temperature. It's crucial not to use it while it's too hot. Option 2: Heat butter in pan and slowly melt chocolate chips over stovetop. 

  1. In a large mixing bowl, whip the eggs. Add the butter chocolate mixture, activated sourdough starter, and vanilla extract. Stir to combine. Add the optional blackberries. In a smaller bowl, combine the flour, sugar, baking powder, and salt. Finally, add the dry ingredients to the wet ingredients until just combined (below), being careful not to over-mix.

 

  1. Grease a 9x13-inch pan and pour the brownie batter into it. Allow the batter to rise in a warm spot with a temperature between 70°F and 85°F for approximately 30 minutes. This step contributes to the fudge texture and allows the sourdough work its magic.

  2. While you let the batter rest, preheat your oven to 350°F (175°C). Bake the brownies for 35 to 40 minutes. Keep an eye on them and adjust the baking time according to your desired level of fudginess. Insert a toothpick into the center, and if it comes out with a few moist crumbs clinging to it, your brownies are ready to be devoured!
